How to Make Vegetarian Cheddar Cheese Schnitzel

I’ve been making these meatless cheese schnitzels at home for years, and over time I’ve simplified and improved the recipe. These cheese schnitzels taste great and are loved by everyone, including kids. We especially love eating them with fried potatoes. They are very easy and quick to make, and I usually have all the necessary ingredients at home.

What kind of cheese to use

For a long time, I made cheese schnitzels using sliced cheese or by cutting a block of cheese into slices of the right thickness. This works quite well. But recently, I’ve started making them with shredded cheese instead. When using shredded cheese, you’ll need to add some flour and egg to the batter. The breading sticks more evenly and better with shredded cheese, making it simpler to work with, in my opinion. In this recipe, I’ll include instructions for making schnitzels with both shredded and sliced cheese. One thing I recommend when choosing your cheese is to make sure it doesn’t contain harmful additives, especially in pre-shredded cheese.

Freezing schnitzels

It’s very convenient to store schnitzels in the fridge before cooking. You can take them straight from the fridge to the pan without thawing, and you won’t notice a difference in taste. After cooking, you can also freeze them, but keep in mind that they’ll already have browned on the outside, so when thawing, you’ll need to do it at a low temperature to avoid burning the breading or you can thaw them in a hot oven.

FAQs

Can mozzarella be breaded?
Yes, it can! If you’re using soft mozzarella (or any soft cheese), you can do a double or even triple breading to prevent the cheese from melting out. You can also make mozzarella sticks with multiple layers of breading.

Do cheese schnitzels stay good for long?
I recommend eating schnitzels right after they’re made. After sitting and cooling down, they tend to get hard.

Can you use panko breadcrumbs for breading?
Yes, panko crumbs works well, though it may not be as healthy.

All-purpose flour (needed only if you’re using shredded cheese)

Making Cheese Schnitzels

Below are two different methods: one for using sliced cheese and one for using shredded cheese.

Sliced Cheese Schnitzels

  1. In a wide bowl, beat the eggs and add salt to the egg mixture.
  2. Place breadcrumbs on a large plate or in a shallow bowl.
  3. Take 5 slices of cheese and stack them, or cut a block of cheese into slices about 1 cm (0.4 inches) thick.
  4. Dip the cheese slices into the egg mixture, making sure all sides are coated.
  5. Place the egg-covered cheese into the breadcrumbs and coat thoroughly. If the breadcrumbs don’t stick well, repeat the process: dip it in the egg again and then coat it with breadcrumbs.
  6. Place the schnitzels on the large frying pan and fry over medium-high heat or medium heat until golden brown. Keep an eye on them, as the breading can burn quickly and unexpectedly.
  7. Serve with homemade ketchup and mayonnaise!

Shredded Cheese Schnitzels

  1. In a wide bowl, beat the eggs and add salt to the egg mixture.
  2. Place breadcrumbs on a large plate or in a shallow bowl.
  3. In a second bowl, place flour, shredded cheese, salt, and egg, and mix well until combined.
  4. Form cheese into patties of your preferred size.
  5. Coat the cheese patties in breadcrumbs. Since the egg is already in the batter, there’s no need to dip them into the egg before breading.
  6. Place the schnitzels on the large frying pan and fry over medium-high or medium heat until golden brown. Stay vigilant, as the breading can burn quickly.
  7. Serve with homemade ketchup and mayonnaise!

Tips and Suggestions

  • I also recommend trying fried cheese balls—they make amazing snacks and are one of our family favorites!
  • If your cheese is salty enough for your taste, you don’t need to add extra salt to the schnitzels. However, I usually add a little salt.
  • It’s better to fry the schnitzels on lower heat rather than higher to ensure the cheese melts properly on the inside.
  • Like pork or chicken schnitzel, you can serve cheese schnitzels with a few lemon wedges on the side. A little lemon juice adds great flavor to the schnitzels.
  • Vegetable oil is bad for your health, use unrefined olive oil for frying. 
  • You can also add black pepper or garlic salt if you’d like to vary different flavors.
