Cinnamon cookies

When the craving for cinnamon cookies strikes, making them according to this recipe results in incredibly delicious treats. Cinnamon cookies happen to be one of my husband’s favorites, which makes baking them even more enjoyable! While for some, cooking might seem like a waste of time since the food is eaten right away, leaving nothing behind, I believe quite the opposite: the faster the family devours a meal with great appetite, the more inspired I am to cook.

In reality, these cookies are made from a very basic shortcrust pastry dough. Shortcrust pastry can be made in various ways – more professional and less so. For making these cookies, I employ the least professional method in the world: I mix all the ingredients together, prepare the cookies immediately, and pop them in the oven. So, in a way, it’s not so much a shortcrust pastry but rather a cookie dough with similar ingredients to shortcrust pastry. Are cinnamon cookies healthy?

Honestly? Not really. They are drenched in white sugar… I generally pay close attention not to feeding my family chemicals or toxins, but I usually don’t reduce the sugar content. Desserts must have sugar in them, otherwise, they aren’t desserts! When possible, I replace white sugar with unrefined brown sugar, but due to its specific taste, it doesn’t suit every dish.

What you’ll need to make cinnamon cookies

Butter

Granulated sugar – You can use either brown or white sugar.

Wheat flour

Egg

How to make cinnamon cookies

  • Mix cold butter, eggs, sugar, and flour together to form a smooth dough. You can cut the butter into smaller pieces beforehand to make the mixing process easier.
  • Shape the dough into cookies according to your preference – roll out the dough and use a knife or cookie cutters. You can also get beautiful round cookies when you shape cookie dough discs in your hand.
  • Sprinkle the cookies evenly with a mixture of cinnamon and sugar. Be cautious not to use too much cinnamon, as it may make the cookies taste bitter. In contrast, I prefer to use more sugar to make them extra sweet!
  • Grease a baking sheet with butter and place the cookies on it.
  • Bake at 180°C (350°F) in the oven for about 8-10 minutes – the cookies should be very lightly golden brown. Be careful, as the cookies can quickly become too brown!

Ideas and tips

  • If you want to make a very large batch of cookies, I recommend rolling out the dough on the table and cutting it into a square grid. However, if you only need one tray of cookies, it might be easier to create small cookie discs by forming them in your hands and then placing them one by one on the baking sheet. This way, you’ll have less trouble rolling out the dough and cleaning up your work surface!
  • You can replace the wheat flour with whole wheat flour or even cornmeal for added flavor.
  • Handling the dough is easier if you let it rest in the refrigerator for a few hours to a day after mixing it.
  • You can arrange the cookies closely on a baking sheet because they don’t rise.
  • You can also freeze the raw cookie dough.
